Breakfast Bombs

Delightful bite-sized treats filled with scrambled eggs, cheese, and breakfast meat, all wrapped in flaky biscuit dough.

Ingredients

  • 1 can refrigerated biscuit dough
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, scramble the eggs and season with salt and pepper.
  3. Cook your choice of breakfast sausage or bacon in the same pan, then crumble it into small pieces.
  4. On a clean surface, flatten each biscuit round.
  5. In the center of each round, spoon the scrambled eggs, sprinkle in some cheese, and add the crumbled meat.
  6. Carefully pinch the edges of the biscuit to seal the filling inside.
  7. Place the sealed dough balls seam-side down onto a baking tray.
  8. Brush each bomb with melted butter and sprinkle with parsley or chives if desired.
  9. Bake for 15-18 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

For a lighter version, use turkey sausage, or mix different cheeses. Store leftovers in the refrigerator for up to three days.
