A vibrant and customizable breakfast bowl packed with protein and fiber, perfect for busy mornings or leisurely brunches.

Ingredients

  • 1 cup cooked quinoa or brown rice
  • 1 cup black beans, drained and rinsed
  • 4 large eggs
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1 cup fresh spinach
  • Olive oil for cooking
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté the diced onion and bell pepper for about 4-5 minutes until they become soft and aromatic.
  3. Scramble the eggs in the same skillet, seasoning with salt and pepper.
  4. Combine the black beans and stir until heated through.
  5. Add the fresh spinach and wilt slightly before removing from heat.
  6. Layer the cooked quinoa or rice at the base in a bowl and top with the sautéed mixture, avocado slices, and salsa.
  7. Garnish with fresh cilantro if desired and enjoy!

Notes

Feel free to swap quinoa for brown rice or throw in any veggies you have on hand. For a vegan twist, replace the eggs with scrambled tofu.
