A delicious and customizable breakfast option filled with fluffy scrambled eggs, crispy potatoes, and gooey cheese, all wrapped in a warm tortilla.

Ingredients

  • 4 large eggs
  • 2 medium potatoes, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • 4 large tortillas
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat up a skillet over medium heat.
  2. Add your diced potatoes and cook until they’re crispy and golden. Remove them from the skillet and set them aside.
  3. In the same skillet, toss in the diced bell peppers and onions. Sauté for a few minutes until they soften and smell delicious.
  4. In a bowl, whisk the eggs together until smooth. Pour those into the skillet and gently scramble them until fluffy.
  5. Return the crispy potatoes to the mixture. If using, add crumbled sausage or bacon at this stage. Season generously with salt and pepper.
  6. Take a generous scoop of the filling and place it down the center of a tortilla. Sprinkle cheese on top and roll it tightly.
  7. To store, wrap burritos in foil or plastic wrap and freeze for future enjoyment.
  8. When you’re ready to eat, simply unwrap them and microwave for 2-3 minutes until heated through.
  9. If you like, serve your burritos with a side of sour cream and salsa.

Notes

You can customize the filling with various ingredients like black beans, sweet potatoes, or different cheeses. Great for meal prep!
