  • 2 cups mixed vegetables (e.g., bell peppers, onions, spinach)
  • 4 slices bacon
  • 6 large eggs
  • 1 cup cheese (e.g., cheddar, mozzarella)
  • 2 cups tater tots
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the breakfast sausage and bacon in a skillet over medium heat until browned. Drain the excess fat.
  3. Whisk together eggs, milk, salt, and pepper in a large mixing bowl until frothy.
  4. Stir in the cooked sausage, bacon, chopped vegetables, and cheese until evenly distributed.
  5. Fold in the tater tots gently.
  6. Pour the mixture into a greased casserole dish, spreading it evenly.
