Ingredients

  • 4 large eggs
  • 1 cup shredded cheese
  • 1 cup cooked sausage, crumbled
  • 1 cup fresh veggies (like bell peppers, spinach, or tomatoes)
  • 4 large tortillas
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a skillet over medium heat, scramble the eggs. Season them with salt and pepper.
  2. Lay a tortilla flat. Scoop a portion of the scrambled eggs into the center.
  3. Add the crumbled sausage, shredded cheese, and your chosen veggies on top.
  4. Carefully fold the sides of the tortilla over the filling, then fold the top and bottom to create a closed wrap.
  5. Place the wrap seam-side down in the skillet. Cook for about 2-3 minutes on each side until golden and crispy.
  6. Serve warm with a side of sour cream and salsa if desired.
