Ingredients

Scale
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin tin by lightly greasing it.
  2. In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix together the milk, egg, melted butter, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 12–15 minutes, until golden brown, and a toothpick comes out clean.
  7. Let them cool slightly on a wire rack before serving.

Notes

Avoid overmixing the batter; a few lumps are fine. For added flavor, consider mixing in chocolate chips or spices.
