Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1 large egg
  • 1/2 cup milk (or almond milk for a dairy-free option)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the whole wheat flour, protein powder, baking powder, and salt until well combined.
  3. Cream the softened butter and honey together until light and fluffy.
  4. Add the egg and milk to the butter mixture, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are golden brown and the tops are set.
  8. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, swap the egg with a flax egg and the honey with maple syrup. Store in an airtight container at room temperature for up to 3 days.
