1 cup Plain 2% Greek Yogurt
2 large Eggs
1 cup All-Purpose Flour
2 tablespoons Ground Flaxseed
1 tablespoon Baking Powder
0.5 teaspoon Salt
0.5 teaspoon Garlic Powder
0.25 teaspoon Red Pepper Flakes (optional)
1 cup Spinach (wilted & squeezed dry)
2 tablespoons Chives (chopped)
1 cup Cheddar Cheese (shredded)
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the Greek yogurt, eggs, and ground flaxseed. Whisk until fully mixed.
Add the all-purpose flour, baking powder, salt, garlic powder, and red pepper flakes (if using). Stir until just combined, being careful not to overmix.
Gently fold in the wilted spinach, chopped chives, and shredded cheese, ensuring even distribution throughout the dough.
Scoop generous portions of the dough and space them about 2 inches apart on the prepared baking sheet.
Bake for approximately 15-20 minutes, or until golden brown. A toothpick inserted should come out clean.
