Delicious breakfast quesadillas filled with fluffy scrambled eggs, vibrant bell peppers, and melted cheddar cheese, perfect for any meal.

Ingredients

  • 2 large eggs
  • 1 cup bell peppers, diced
  • 1 cup shredded cheddar cheese
  • 2 flour tortillas
  • Salt and pepper to taste
  • Cooking oil or butter

Instructions

  1. Whisk the eggs in a bowl. Season with salt and pepper to taste.
  2. Heat a skillet over medium heat and pour in a splash of oil or melt a pat of butter.
  3. Add the diced bell peppers to the skillet and sauté until they are soft.
  4. Pour in the scrambled eggs, gently stirring until they are fully cooked.
  5. Lay one tortilla in the skillet. On top, layer half of the scrambled eggs and half of the cheddar cheese, then top it with a second tortilla.
  6. Cook until the bottom tortilla turns golden brown, then carefully flip it and cook the other side until browned and the cheese has melted.
  7. Remove the quesadilla from the skillet, slice into wedges, and serve warm.

Notes

For best results, serve with fresh avocado slices or salsa. Leftovers can be stored in the refrigerator for up to three days.
