A delightful breakfast featuring a baked sweet potato stuffed with bacon, eggs, and cheese, perfect for a nourishing start to your day.

Ingredients

  • 1 large sweet potato
  • 2 slices of bacon
  • 2 eggs
  • 1/2 cup of shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly and pierce it multiple times with a fork.
  3. Place the sweet potato on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the sweet potato bakes, cook the bacon in a skillet over medium heat until crispy. Remove it from the skillet and set it aside on paper towels to drain.
  5. Using the same skillet, crack the eggs and cook them to your desired doneness.
  6. Once the sweet potato is finished baking, take it out of the oven and let it cool slightly. Carefully cut it open.
  7. Fluff the insides of the sweet potato with a fork and layer in the cooked bacon, eggs, and shredded cheese.
  8. Season with salt and pepper to taste. Garnish with chopped green onions or parsley if desired, and serve warm.

Notes

Feel free to swap bacon for turkey bacon or a plant-based alternative. Experiment with additional toppings like avocado or salsa.
