  • ½ cup heavy cream, cold
  • 1 tbsp powdered sugar

Instructions

  1. Make the Blueberry Compote: In a saucepan, combine blueberries, maple syrup, lemon juice, and water over medium heat. Cook for about 5-7 minutes until the berries soften. If a thicker compote is desired, add a cornstarch slurry and cook for an additional 1-2 minutes, then set aside to cool.
  2. Whip the Cream: In a bowl, whip the cold heavy cream with powdered sugar and vanilla extract until soft peaks form. Refrigerate until ready to serve.
  3. Prepare the Egg Mixture: In another bowl, whisk together eggs, whole milk, vanilla extract, maple syrup, ground cinnamon, and a pinch of salt.
  4. Cook the Brioche: Preheat a non-stick skillet over medium heat and add butter to coat the pan. Dip each brioche slice into the egg mixture for about 15-20 seconds on each side.
  5. Fry Until Golden: Transfer the soaked brioche into the skillet and cook for 2-3 minutes on each side, until golden brown.
  6. Plate and Serve: Place two slices of French toast on a plate, generously top with cooled blueberry compote, scatter fresh blueberries, and add a dollop of whipped cream. Dust with powdered sugar if desired. Enjoy while warm!
