Cheesy Baked Chicken Breast and Peppers

A comforting and satisfying dish featuring tender chicken breasts baked with melted cheese and vibrant bell peppers.

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers, thinly sliced
  • 1 small onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with non-stick spray or olive oil.
  2. Place the chicken breasts in the prepared dish. Drizzle with 1 tablespoon of olive oil. Season both sides with Italian seasoning, garlic powder, paprika, salt, and black pepper, rubbing the spices into the chicken for maximum flavor.
  3. In a separate bowl, combine the bell peppers (and optional onions) with the remaining tablespoon of olive oil. Toss well to coat, then arrange the mixture around and over the chicken in the baking dish.
  4. Bake uncovered for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  5. Once done, remove from the oven and sprinkle the mozzarella and Parmesan cheeses evenly over the chicken and vegetables. Return to the oven for an additional 3 to 5 minutes until the cheese is melted and bubbly.
  6. Garnish with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator. Reheat in the oven at 350°F (175°C) until heated through.
