Warm, cheesy breakfast quesadillas filled with melted cheese and fluffy scrambled eggs, perfect for a quick meal or brunch.

  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 eggs
  • 1/4 cup cooked vegetables (like bell peppers or onions, optional)
  • Salt and pepper to taste
  • Cooking spray or butter

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. In a bowl, scramble the eggs with a pinch of salt and pepper until well mixed.
  3. Lightly spray the skillet with cooking spray or melt a small amount of butter.
  4. Place one tortilla in the skillet and sprinkle half of the cheese on top.
  5. Pour the scrambled eggs over the cheese and add cooked vegetables if desired.
  6. Top with remaining cheese and cover with the second tortilla.
  7. Cook for 3-4 minutes until the bottom is golden brown.
  8. Carefully flip and cook for another 3-4 minutes until both sides are crispy and cheese is melted.
  9. Remove, slice into wedges, and serve hot.
