  • 2 cups potatoes, diced
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Foil for wrapping

Instructions

  1. Preheat your oven to 400°F (200°C) or fire up the grill.
  2. Combine the diced potatoes, sliced bell peppers, and onions in a large bowl.
  3. Drizzle with olive oil, then sprinkle in the garlic powder, paprika, salt, and pepper. Toss everything until well coated.
  4. Cut a piece of foil large enough to wrap around a chicken breast along with the vegetable mixture.
  5. Place one chicken breast in the center of the foil. Top it with the seasoned vegetable mixture and a generous sprinkle of shredded cheese.
  6. Fold the foil tightly around the chicken and vegetables to create a secure packet.
  7. Set the foil packet on a baking sheet for the oven; if grilling, place it directly on the grill.
  8. Bake for 25-30 minutes or grill for 20-25 minutes, until the chicken is cooked through and the veggies are tender.
