A delightful blend of crispy bread, fluffy eggs, and bubbly cheese, perfect for breakfast or brunch.

Ingredients

  • 2 slices thick bread (sourdough or whole grain)
  • 2 large eggs
  • 1/2 cup cheese (cheddar, mozzarella, or pepper jack)
  • 2 tablespoons fresh herbs (chives, parsley, or cilantro)
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup sautéed vegetables (spinach, mushrooms, or tomatoes)
  • 2 tablespoons honey (optional for sweet version)
  • 1 cup fresh fruits (optional for sweet serving)

Instructions

  1. Preheat your oven’s broiler to high.
  2. Toast the bread slices until golden brown and crispy.
  3. Sauté your choice of vegetables in a skillet until tender.
  4. Whisk the eggs, cheese, fresh herbs, salt, pepper, and optional cayenne together until well combined.
  5. Layer the sautéed vegetables over the toasted bread.
  6. Pour the egg mixture over the vegetables.
  7. Place the assembled toast under the broiler for about 3-5 minutes, or until the eggs are set and the cheese is bubbling and golden.
  8. Serve with a drizzle of honey and fresh fruit on the side if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat under the broiler or microwave.
