This dish effortlessly combines tender chicken breasts with a rich, flavorful filling of sautéed garlic and mushrooms, topped with gooey cheese.

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 4 tablespoons butter
  • 3 garlic cloves, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the chopped mushrooms along with the Italian seasoning, cooking until the mushrooms have softened, approximately 4-5 minutes.
  4. Season the mixture with salt and pepper, then remove from heat.
  5. Carefully cut a pocket into each chicken breast and stuff each pocket with the mushroom mixture. Top with a generous amount of shredded cheese.
  6. In a large skillet, heat olive oil and sear the stuffed chicken breasts until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer the chicken to a baking dish and bake for 25-30 minutes or until fully cooked through.

Notes

Let the stuffed chicken rest for a few minutes before serving to help redistribute the juices for a more tender bite.
