A delightful blend of crispy potatoes, fluffy eggs, and gooey cheddar that’s perfect for breakfast or brunch.

  • 2 cups diced potatoes
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup diced ham or bacon (optional)
  • 2 tablespoons olive oil
  • Chopped green onions (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes. Cook for 10-15 minutes, stirring occasionally, until they are crispy and golden brown.
  3. In a separate bowl, whisk the eggs and season them with salt and pepper.
  4. If using ham or bacon, add it to the skillet once the potatoes are cooked.
  5. Push the crispy potatoes to one side; pour the beaten eggs into the skillet.
  6. Stir gently, allowing the eggs to scramble as they cook.
  7. Just before they are fully cooked, sprinkle cheddar cheese on top.
  8. Mix everything together until the eggs are completely set and the cheese is melted.
  9. Garnish with chopped green onions before serving.
