A comforting one-pan dish with crispy potatoes, fluffy eggs, and melted cheese, perfect for any meal of the day.

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: cooked ham or bacon, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet. Cook until they’re golden and crispy, about 10-15 minutes.
  3. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  4. Once the potatoes are crispy, push them to one side of the skillet. Pour the whisked eggs into the opposite side. Scramble the eggs until cooked through.
  5. Stir in the cheese and, if using, add the optional ham or bacon. Mix until everything is melted and well combined.
  6. Serve hot, garnished with chopped green onions for a pop of color.

Notes

Ensure your skillet is hot enough before adding potatoes to avoid sogginess. For fluffier eggs, add a splash of milk or cream.
