Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook, stirring occasionally, until they are crispy and golden, about 10-15 minutes.
  3. Whisk together the eggs, salt, and pepper in a bowl until well combined.
  4. Pour the egg mixture over the cooked potatoes in the skillet.
  5. If using ham or bacon, add it now and stir gently to mix.
  6. Allow the mixture to cook until the eggs are just set, about 3-5 minutes.
  7. Sprinkle the shredded cheddar cheese over the top. Cover the skillet and let it sit until the cheese melts.
  8. Garnish with chopped green onions if desired and serve warm.

Notes

For perfectly crispy potatoes, ensure the skillet is hot before adding the diced potatoes. Don’t overcrowd the skillet; make in batches if needed.
