A warm, cheesy potato egg scramble that combines crispy potatoes, fluffy eggs, and melted cheddar cheese for a comforting meal.

Ingredients

  • 2 medium potatoes, cubed
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: diced ham or bacon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped chives or parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the cubed potatoes and cook until they are crispy and golden brown, about 10-15 minutes.
  3. While the potatoes are cooking, beat the eggs in a bowl and season with salt and pepper.
  4. Push the cooked potatoes to one side of the skillet and pour the eggs into the empty side. Scramble the eggs until they are cooked through.
  5. Combine the eggs and potatoes in the skillet and sprinkle in the shredded cheddar cheese and any optional diced ham or bacon.
  6. Stir everything together until the cheese melts and all ingredients are well mixed.
  7. Garnish with chopped chives or parsley before serving.
