Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and sauté until golden brown and crispy, around 10-15 minutes, stirring occasionally.
  3. While the potatoes cook, whisk the eggs in a bowl with salt and pepper.
