Quick and flavorful Chicken Fajitas with marinated chicken, bell peppers, and onions wrapped in warm tortillas.

  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 4 tortillas
  • Guacamole (for serving)

Instructions

  1. Start by marinating the chicken breasts in olive oil and fajita seasoning for at least 30 minutes.
  2. Heat a skillet over medium-high heat, add the marinated chicken, and cook until golden brown, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and let it rest.
  4. Toss in the sliced bell peppers and onions in the same skillet and sauté for roughly 5 minutes until tender.
  5. Slice the rested chicken into strips and return to the skillet, stirring to combine.
  6. Warm the tortillas in a separate pan or microwave until soft.
  7. Serve the chicken and vegetable mixture in warm tortillas, topped with guacamole.
