Delicious marinated chicken and colorful veggies grilled to perfection.

  • 1 pound chicken breast, cubed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetables (bell peppers, onions, zucchini), cubed

Instructions

  1. Whisk together the olive oil, lemon juice, soy sauce, minced garlic, paprika, salt, and pepper until well combined.
  2. Add the cubed chicken to the marinade, ensuring each piece is coated. Allow it to marinate for at least 30 minutes, or longer if possible.
  3. Chop your vegetables into bite-sized pieces.
  4. Thread the marinated chicken and veggies onto skewers, alternating to create a colorful presentation.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and shows grill marks.
  7. Serve hot, alongside rice or a fresh salad.

Marinate the chicken overnight for enhanced flavor. Soak wooden skewers in water for 30 minutes before grilling.
