  • 2 large chicken breasts
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Slice the chicken breasts into cutlets, ensuring even cooking.
  3. In two bowls, prepare one with beaten eggs and the other with a mix of panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Dip each chicken cutlet in the egg, allowing excess to drip off.
  5. Coat the chicken thoroughly with the breadcrumb mixture.
  6. Arrange the coated cutlets in the greased baking dish and drizzle them with olive oil.
  7. Bake for 20–25 minutes until the chicken is golden and cooked through.
  8. Once baked, top each chicken piece generously with marinara sauce and sprinkle with shredded mozzarella.
  9. Return to the oven for an additional 10–12 minutes until the cheese melts and bubbles beautifully.
  10. Broil for an extra 1–2 minutes, if desired, for a crispy finish.
  11. Garnish with fresh basil leaves and serve hot.
