A comforting Chicken Stroganoff with creamy sauce, tender chicken, and earthy mushrooms, perfect for busy weeknights.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Egg noodles or rice, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onions and minced garlic. Sauté until translucent and fragrant, about 3 minutes.
  3. Toss in the sliced mushrooms and continue cooking until they’re tender.
  4. Stir in the flour and cook for about a minute to create a roux.
  5. Gradually pour in the chicken broth, stirring continuously until the sauce thickens.
  6. Lower the heat and mix in the sour cream until smooth and creamy.
  7. Add the diced cooked chicken, coating it well with the sauce.
  8. Season with salt and pepper to taste. Serve hot over egg noodles or rice.

Notes

For a lighter option, use Greek yogurt instead of sour cream. Garnish with fresh herbs or paprika for added flavor.
