A comforting and flavorful dish combining canned chickpeas and fried eggs with sun-dried tomatoes.

Ingredients

  • 1 can of chickpeas
  • 4 eggs
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Start by heating a splash of olive oil in a pan over medium heat.
  2. Rinse and drain the canned chickpeas, then add them to the pan. Sauté until they become slightly crisp.
  3. Toss in the chopped sun-dried tomatoes for an extra burst of flavor.
  4. Create a small well in the chickpeas and carefully crack an egg into it.
  5. Cover the pan for a few minutes, allowing the egg to cook until it reaches your desired level of doneness.
  6. Add a sprinkle of salt and pepper before serving.

Notes

For a vegan variation, replace the egg with a tofu scramble. Consider adding feta cheese or olives for a Mediterranean twist.
