Delicious chicken thighs marinated in a vibrant chimichurri sauce, perfect for quick dinners and entertaining.

Ingredients

  • 4 chicken thighs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Combine the chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Reserve half of the chimichurri sauce for serving later.
  3. Marinate the chicken thighs in the remaining chimichurri sauce for at least 30 minutes.
  4. Preheat your grill to medium-high heat.
  5. Grill the marinated chicken thighs for about 6-7 minutes on each side, until fully cooked.
  6. Serve the grilled chicken hot, topped with the reserved chimichurri sauce.

Notes

For a leaner option, substitute chicken thighs with chicken breasts. Leftover chimichurri can be refrigerated for up to one week.
