A vibrant and flavorful dish featuring chicken breasts marinated in a fresh, tangy chimichurri sauce, perfect for summer gatherings or weeknight dinners.

  • 4 chicken breasts
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Mix together the chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper to create a bright chimichurri sauce.
  2. Reserve half of the chimichurri sauce for topping later.
  3. Marinate the chicken breasts in the remaining sauce for at least 30 minutes.
  4. Preheat your grill or skillet over medium-high heat.
  5. Grill or sauté the marinated chicken for about 6–7 minutes on each side, until fully cooked through.
  6. Serve the chicken, proudly topped with the reserved chimichurri sauce for that extra zing.

Notes

For maximum flavor, marinate chicken for longer if possible. Pair with a refreshing garden salad or grilled vegetables.
