  • 2 lb. chicken (breasts, thighs, legs, quarters, or whole chicken)
  • 1/4 cup fresh cilantro leaves (chopped)
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup fresh squeezed lime juice (juice of 2 limes)
  • 1 Tablespoon lime zest (zest of 1 lime)
  • 2 teaspoons minced garlic (about 2 cloves)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Whisk together the chopped cilantro, olive oil, lime juice, lime zest, minced garlic, chili powder, cumin, salt, and pepper in a medium bowl to create the marinade.
  2. Place the chicken in a resealable plastic bag or shallow baking dish, then pour the marinade over it. Make sure the chicken is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (but up to 12 hours for the best flavor).
  3. Preheat your grill to medium heat and lightly grease the grill grates to prevent sticking.
  4. Grill the chicken: Boneless pieces will take about 4-6 minutes per side, while bone-in cuts need about 8-10 minutes per side. Always check that the chicken reaches an internal temperature of 165°F for safe eating.
  5. Serve the zesty chicken right away and enjoy!

Notes

For deeper flavor, marinate longer. Use a meat thermometer for perfect doneness. You can experiment with spices for added heat.
