Cinnamon Roll Baked Oatmeal Squares

A cozy breakfast or snack that merges cinnamon rolls with wholesome oatmeal, perfect for any occasion.

  • 1 ½ cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or coconut oil (for swirl)
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon (for swirl)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together rolled oats, baking powder, ½ teaspoon of cinnamon, and salt until fully combined.
  3. In a separate bowl, mix the egg, milk, maple syrup, 2 tablespoons of melted butter or coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing!
  5. Spread half of the oatmeal mixture evenly into the greased baking dish.
  6. In a small bowl, blend 1 tablespoon of melted butter, brown sugar, and ½ teaspoon of cinnamon to create a swirl mixture.
  7. Sprinkle half of the swirl mixture over the oatmeal layer.
  8. Pour the remaining oatmeal mixture over the top, followed by the rest of the cinnamon-sugar mixture.
  9. Bake in the preheated oven for 25-30 minutes, or until set and lightly golden brown.
  10. Allow the squares to cool slightly before cutting. Serve warm, drizzling with extra maple syrup if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For freezing, wrap squares individually and store in a freezer-safe bag for up to 3 months.
