A flavorful and easy marinade that tenderizes chicken with a burst of citrus and Dijon mustard. Perfect for summer barbecues.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Juice of 1 orange
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (optional, like thyme or rosemary)

Instructions

  1. Whisk together the Dijon mustard, olive oil, lemon juice, orange juice, minced garlic, salt, and pepper until everything is well combined.
  2. Place the chicken breasts in a resealable bag or a shallow dish.
  3. Pour the marinade over the chicken, making sure all pieces are thoroughly coated.
  4. Seal or cover the container and refrigerate for at least 30 minutes. For best results, marinate overnight.
  5. Preheat your grill to medium-high heat.
  6. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the grill and let the chicken rest for a few minutes before serving.

Notes

Letting the chicken marinate overnight will yield the most flavor. You can also cook the marinated chicken in an oven at 400°F (200°C) for about 20-25 minutes if grilling isn’t an option.
