Irresistibly fluffy coffee cake muffins with a sweet streusel topping, perfect for breakfast or an afternoon snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gradually pour the wet mix into the dry ingredients. Stir gently, taking care not to overmix.
  5. In a small bowl, prepare the streusel by mixing the flour, brown sugar, and cinnamon. Add the cold butter and work it in until the mixture resembles coarse crumbs.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Generously sprinkle the streusel topping over the muffin batter.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, serve warm with butter or honey. Store in an airtight container for up to three days or freeze for up to three months.
