  • 2 large eggs
  • 1/2 cup shredded cheddar cheese (or mozzarella)
  • 2 tbsp almond flour (optional)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp onion powder (optional)
  • 1 tbsp melted butter or olive oil (optional)
  • 12 tsp sweetener (erythritol/stevia or 1 tsp vanilla extract – only if making sweet chaffles)
  • Non-stick spray or additional melted butter (for greasing the waffle iron)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with non-stick spray or melted butter.
  2. Combine the cottage cheese and eggs in a mixing bowl. Whisk until the mixture is smooth.
  3. Add the shredded cheese, almond flour (if using), baking powder, salt, and any optional spices. Mix until well combined, creating a thick batter.
  4. Pour a portion of the batter into the preheated waffle iron. Spread it evenly. Close the lid and cook for about 3-5 minutes, or until golden brown.
  5. Carefully remove the chaffle and repeat the process with the remaining batter.
