  • 1/2 cup chopped vegetables (e.g., spinach, bell peppers, onion)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. Combine cottage cheese, eggs, salt, and pepper in a blender. Blend until smooth and creamy.
  3. Mix chopped vegetables and shredded cheese in a separate bowl.
  4. Pour the blended egg mixture over the vegetables and cheese, stirring until fully combined.
  5. Divide the mixture evenly among greased muffin tin cups.
