These Cottage Cheese Egg Bites are a protein-packed breakfast option that is quick to prepare and perfect for any time of day.

  • 8 whole Eggs
  • 1 cup Cottage Cheese
  • 1 cup Bacon Bits
  • 1 teaspoon Garlic Powder
  • 1 cup Colby Jack Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • Cooking Oil Spray

Instructions

  1. Preheat your oven to 375°F (190°C) and coat a muffin pan with cooking spray.
  2. Whisk together the eggs, cottage cheese, garlic powder, salt, and black pepper until well combined.
  3. Fold in the bacon bits and the Colby Jack cheese until fully incorporated.
  4. Pour the mixture evenly into the prepared muffin pan, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  6. Allow to cool for a few minutes before gently removing the bites from the pan.

Notes
