A versatile and nutritious flatbread made with cottage cheese, perfect for a light lunch or family brunch.

  • 1 cup full-fat cottage cheese
  • 2 large eggs (room temperature)
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon dried oregano (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly oil it.
  2. Blend together the cottage cheese, room temperature eggs, salt, garlic powder, and oregano until smooth.
  3. Pour the batter onto the prepared baking sheet, spreading it into a thin rectangle about 1/4-inch thick.
  4. Bake for 35-40 minutes, or until the flatbread is golden and firm to the touch.
  5. Allow the flatbread to cool completely before slicing.

Notes

Store leftovers wrapped tightly in plastic wrap or in an airtight container. Will keep in the refrigerator for up to three days; freeze for up to a month.
