Cottage cheese protein discs are a fluffy and nutritious snack that can double as a satisfying meal, perfect for busy days or meal prep.

  • 2 large eggs
  • 60 g oats
  • 1 small garlic clove, grated
  • 1 tsp mustard
  • 1 tsp baking powder
  • 1/2 organic lemon, zested
  • Salt, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Oil or butter for frying

Instructions

  1. In a large bowl, combine the cottage cheese and eggs until well mixed.
  2. Stir in the oats, grated garlic, mustard, baking powder, and lemon zest, ensuring everything is blended well.
  3. Season your mixture with salt, pepper, and paprika according to your taste.
  4. Heat a splash of oil or butter in a non-stick pan over medium heat.
  5. Spoon small dollops of the mixture into the pan, shaping them into discs as you go.
  6. Cook each side for about 3-4 minutes, or until they are golden brown. Flip them gently to ensure even cooking.
  7. Remove the discs from the pan and let them cool slightly before serving.

Notes
