A delightful medley of buttery chicken bites infused with zesty lemon and spices, perfect for weeknight dinners.

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Lemon wedges, for serving
  • Optional: ½ teaspoon cayenne pepper

Instructions

  1. Pat the chicken pieces dry. Generously season them with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken, cooking for about 3–4 minutes on each side until golden brown. Once done, remove the chicken and set it aside.
  3. In the same skillet, lower the heat to medium. Melt the butter and add the minced garlic, stirring for approximately 30 seconds until fragrant.
  4. Mix in the Dijon mustard, lemon juice, lemon zest, red pepper flakes, smoked paprika, chopped parsley, and thyme. Stir until everything is combined well.
  5. Return the chicken to the skillet, gently tossing it to coat in the rich buttery sauce. Allow it to simmer for an additional 1–2 minutes to absorb the flavors.
  6. Garnish with extra parsley if desired, and serve hot with lemon wedges.

Notes

These chicken bites are best enjoyed fresh off the skillet. You can also serve them with rice, salad, or roasted vegetables.
