  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream (or coconut milk for a lighter option)
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Season the diced chicken with salt and pepper, cooking for about 6-8 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the remaining butter. Add the minced garlic and diced onion, sautéing for about 3-4 minutes until they become translucent.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and red pepper flakes, allowing the mixture to simmer for approximately 5 minutes until the sauce thickens.
  5. Return the cooked chicken and drained pasta to the skillet with the sauce. Toss everything together to coat the pasta and chicken evenly, letting it cook for an additional 2 minutes.
  6. Sprinkle grated Parmesan cheese on top; let it melt before garnishing with fresh parsley. Serve and enjoy!
