A delicious breakfast casserole featuring crispy bacon, creamy eggs, and gooey cheddar cheese atop a crispy bed of tater tots.

Ingredients

  • 1 pound bacon, cooked and crumbled
  • 1 (32-ounce) bag frozen tater tots
  • 8 large eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Chopped green onions or parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and milk until smooth. Season with garlic powder, salt, and pepper, then mix well.
  3. Grease a 9×13-inch baking dish and arrange the tater tots evenly at the bottom.
  4. Sprinkle the crumbled bacon generously over the tater tots.
  5. Pour the egg mixture evenly over the tater tots and bacon.
  6. Finish by topping with shredded cheddar cheese.
  7. Bake for 45-50 minutes, or until the casserole is golden and set in the middle.
  8. Cool slightly, slice, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave for 1-2 minutes or in the oven at 350°F for 15 minutes.
