A fuss-free creamy Cajun chicken pasta made in the slow cooker that’s perfect for busy weeknights and family gatherings.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta (or pasta of choice)
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts with olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the spices into the chicken thoroughly.
  2. In a skillet, brown the chicken lightly for 2-3 minutes on each side. This adds a great depth of flavor.
  3. Transfer the chicken to the bottom of your slow cooker.
  4. Layer the sliced bell pepper, onion, and minced garlic on top of the chicken.
  5. Pour in the diced tomatoes, including the juices, and add the chicken broth.
  6. Cover the slow cooker. Cook on low for 4-5 hours or high for 2-3 hours, until the chicken is cooked through.
  7. Once cooked, remove the chicken and shred it. Return the shreds to the slow cooker.
  8. Stir in the heavy cream and Parmesan cheese until everything is well mixed.
  9. Cook the pasta according to the package instructions. Drain it, then add it to the slow cooker.
  10. Heat everything together for an additional 15-20 minutes on low to meld those wonderful flavors.
  11. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, use tofu or hearty vegetables like mushrooms and zucchini. Store leftovers in an airtight container in the fridge for up to 3-4 days.
