  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Generously season the chicken breasts with salt and pepper. Add them to the pan and cook for about 5-7 minutes per side until they are beautifully browned and fully cooked through.
  3. After cooking, remove the chicken from the pan and set it aside.
  4. In the same pan, add the minced garlic and ginger. Sauté for 1 minute until fragrant.
  5. Pour in the coconut milk, stirring well to combine. Bring it to a gentle simmer.
  6. Return the chicken to the pan, making sure each piece is thoroughly coated in the coconut sauce.
  7. Let it simmer for an additional 5 minutes until the sauce thickens slightly.
  8. Serve hot, garnished with fresh cilantro.
