Creamy Garlic Chicken Thighs

A rich and indulgent dish featuring crispy chicken thighs in a creamy garlic sauce, perfect for any weeknight dinner.

  • 8 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, place the chicken thighs skin-side down and sear for 6-8 minutes until golden brown. Flip and cook for an additional 5-6 minutes until the chicken is cooked through. Remove from the skillet and set aside.
  3. Lower the heat to medium and add butter to the skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping up any brown bits from the skillet, and let it simmer for 3-4 minutes.
  5. Stir in the heavy cream and let the mixture simmer for 2-3 minutes until it thickens slightly.
  6. Add the freshly grated parmesan cheese and stir until melted and incorporated.
  7. Return the chicken to the skillet, spoon the creamy sauce over the thighs, and garnish with chopped parsley before serving.

Notes

For a lighter version, consider using boneless chicken thighs or substituting half of the heavy cream with Greek yogurt.
