An indulgent yet approachable dish of tender chicken breasts in a creamy sauce, served with al dente penne pasta and sun-dried tomatoes, perfect for weeknight dinners or special gatherings.

  • 8 oz penne pasta
  • 1 lb chicken breast
  • 1 tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 4 tbsp all-purpose flour
  • 2 tbsp Parmesan cheese (grated)
  • 2 tsp olive oil
  • 1 tbsp butter
  • 3 to 4 cloves garlic (smashed and minced)
  • 1 small onion (finely diced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ⅓ cup sun-dried tomatoes (drained and cut into pieces)
  • 1½ tsp tomato paste
  • 1 tsp sugar
  • ½ tsp red pepper flakes
  • ¼ cup Parmesan cheese (grated, for serving)
  • Fresh basil (for garnish)
  • Extra grated Parmesan cheese (for serving)

Instructions

  1. In a pot of salted water, cook the penne pasta until al dente. Reserve a cup of pasta water before draining.
  2. Slice the chicken breast into cutlets and season both sides with salt and black pepper.
  3. In a shallow dish, mix together the flour and 2 tablespoons of Parmesan cheese. Dredge the chicken cutlets in this mixture.
  4. In a large skillet, heat olive oil and butter over medium heat. Cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
  5. In the same skillet, add the finely diced onions and smashed garlic. Sauté until they are translucent and fragrant, about 2-3 minutes.
  6. Pour in the chicken broth and heavy cream, and stir in the sun-dried tomatoes, tomato paste, sugar, and red pepper flakes. Allow it to simmer for about 5 minutes.
  7. Return the chicken to the skillet, adding in the cooked pasta and a little reserved pasta water if needed. Toss everything together until well coated. Serve garnished with fresh basil and extra Parmesan cheese.

Notes

Use a meat thermometer to ensure your chicken is cooked through (165°F is ideal). Reserve pasta water for added creaminess. Fresh herbs can enhance flavor.
