A comforting yet elegant pasta dish featuring juicy chicken breasts, creamy sauce, and sun-dried tomatoes.

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces mafaldine pasta (or penne/fusilli)
  • 0.25 cup reserved pasta water
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat. Sear the chicken for about 5–6 minutes on each side until golden brown and cooked through. Once done, remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1–2 minutes until fragrant, allowing those flavors to build.
  3. Pour in the heavy cream and chicken broth, then sprinkle in the Italian seasoning. Let this mixture simmer for about 4–5 minutes, melding all the wonderful flavors.
  4. Add the freshly grated parmesan cheese. Stir until it melts and the sauce is smooth and inviting.
  5. Cook your choice of pasta according to package directions. Be sure to reserve 0.25 cup of pasta water before draining.
  6. Slice the cooked chicken and return it to the skillet along with the pasta. Mix everything well, adding pasta water as needed to achieve your desired sauce consistency.
  7. To finish, garnish with fresh parsley and extra parmesan cheese before serving.

Notes

For added flavor, consider marinating the chicken in Italian seasonings for a couple of hours before cooking. Add red pepper flakes for a spicy kick.
