A vibrant, creamy pasta dish featuring succulent chicken breasts enveloped in a luscious sauce, ideal for cozy weeknights or special occasions.

  • 2 large chicken breasts (about 600g)
  • Salt and black pepper to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream (double cream)
  • 3/4 cup grated Parmesan cheese
  • 300g dried pasta (penne or fettuccine)
  • Fresh basil leaves for garnish
  • 1 tbsp chopped fresh parsley (optional)
  • Juice of 1/2 lemon

Instructions

  1. Season both sides of the chicken breasts with salt, black pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and sear for 4–5 minutes on each side until golden and cooked through.
  3. Remove the chicken from the skillet and set aside to rest while preparing the sauce.
  4. Lower the heat to medium, add butter, and sauté the onion for about 3 minutes until translucent.
  5. Stir in minced garlic, sun-dried tomatoes, and red pepper flakes (if using), cooking for a minute until fragrant.
  6. Pour in the chicken broth, scraping up browned bits, and let simmer for 2–3 minutes.
  7. Stir in the heavy cream and allow simmering for another 3–4 minutes; add Parmesan cheese, stirring until melted and combined.
  8. Cook the pasta according to package instructions, reserving 1/2 cup pasta water, then drain.
  9. Toss the cooked pasta into the creamy sauce, adding reserved pasta water as needed for consistency.
  10. Return the sliced chicken to the skillet, mixing until warmed through.
  11. Garnish with fresh basil and parsley before serving immediately.

Notes

For a deeper flavor, marinate the chicken in Italian seasoning and lemon juice before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
