A rich and flavorful creamy soup that combines chicken, sun-dried tomatoes, and cheeses, perfect for cozy evenings or gatherings.

  • ½ medium yellow onion, diced
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, packed in olive oil
  • 2 tablespoons tomato paste
  • 7 cups chicken broth
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • ½ teaspoon crushed red pepper
  • 12 oz gluten-free shell pasta
  • 2 cups cooked chicken, shredded
  • 3 cups fresh baby spinach
  • ¾ cup half & half
  • 1 package Boursin cheese
  • ½ cup Parmesan cheese, freshly grated for topping

Instructions

  1. Warm olive oil in a Dutch oven over medium heat.
  2. Add diced onions and minced garlic; sauté for 3-4 minutes until softened and fragrant.
  3. Mix in sun-dried tomatoes and tomato paste; cook for 1-2 minutes.
  4. Pour in the chicken broth, then season with salt, pepper, Italian seasoning, and crushed red pepper.
  5. Bring the mixture to a gentle boil.
  6. Add the gluten-free shell pasta and cook for about 5 minutes, or until al dente.
  7. Lower the heat, then stir in shredded chicken, spinach, half & half, Boursin cheese, and Parmesan cheese. Cook until the cheeses melt into a creamy mixture.
  8. Serve hot, topped with remaining Parmesan, red pepper flakes, or fresh herbs.

Notes

You can substitute gluten-free pasta with regular pasta if gluten is not a concern. High-quality cheese will elevate the flavor.
