  • 1 cup rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Season chicken breasts with salt and pepper, then add to the skillet and cook until browned on both sides, about 5 minutes per side.
  4. In a separate bowl, mix cream of chicken soup, chicken broth, and heavy cream until smooth. Pour over the chicken in the skillet.
  5. Add rice and stir well to combine.
  6. Cover the skillet, reduce heat to low, and let simmer for 20-25 minutes or until chicken is fully cooked and rice is tender.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

For a lighter version, swap heavy cream for half-and-half. Leftovers can be stored in an airtight container for 3-4 days.
