A healthier spin on the classic Chicken Parmesan, combining crispy chicken, rich marinara, and gooey cheese for a comforting weeknight dinner.

  • 4 pieces boneless skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups marinara sauce

Instructions

  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. In a shallow bowl, whisk the eggs until frothy.
  4. In another bowl, mix the breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  5. <strong dip each chicken breast into the egg mixture, allowing the excess to drip off.
  6. Coat the chicken in the breadcrumb mixture, pressing gently to adhere.
  7. Arrange the coated chicken on the prepared baking sheet.
  8. Bake for about 25-30 minutes until golden brown and cooked through.
  9. In the last 5 minutes, top each piece with marinara sauce and mozzarella cheese.
  10. Return to the oven until the cheese is bubbly and melted.
  11. Let the chicken rest for 5 minutes before slicing.

Notes

For extra crispiness, consider broiling the chicken for the last couple of minutes of baking. This dish pairs well with a fresh mixed green salad or spaghetti.
