A delightful combination of breaded chicken, melted cheese, and savory marinara sauce, perfect for weeknight dinners or family gatherings.

  • 2 large boneless, skinless chicken breasts (halved horizontally)
  • Salt to taste
  • Pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs (beaten and whipped until frothy)
  • 1 cup Panko breadcrumbs
  • 1/2 cup fresh grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 cup neutral vegetable oil (like Canola)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Prepare the chicken: Slice the chicken breasts horizontally to create thin cutlets.
  2. Season: Sprinkle salt and pepper on both sides of the chicken for flavor.
  3. Set up a breading station: In one dish, place flour; in another, pour in the beaten eggs; in a third dish, mix Panko breadcrumbs with grated Parmesan, Italian seasoning, and minced garlic.
  4. Breading: Dredge each chicken cutlet in flour, shake off any excess, dip into the egg, then coat generously in the Panko mixture, pressing gently to make it stick.
  5. Fry: Heat vegetable oil in a large skillet over medium heat. Once hot, fry the cutlets for about 4–5 minutes per side or until golden brown and cooked through.
  6. Bake: Preheat your oven to 400°F (200°C). Once fried, place the chicken in a baking dish. Top with marinara sauce and sprinkle mozzarella cheese on top.
  7. Finish in the oven: Bake for 10–15 minutes or until the cheese is melted and bubbly.
  8. Garnish and serve: Sprinkle with fresh parsley before serving. This dish is best served hot with a side of spaghetti or a fresh salad.

Notes

For a spicy version, add crushed red pepper flakes to the Panko mixture. Serve with garlic bread for soaking up extra marinara.
